The Use Component Data checkbox lets you define whether or not the component data is used in calculating the density or MW of a stream object.

Selected means that the density or MW value from the component data is used in converting mass flow rate to/from volume flow rate.

Not selected means that the density or MW value from the component data is not used.
Example
For example, 3FC102 stream has both density tag and analyzer that contains component tags.
There are two sources of density value (one from density tag, the other from analyzer). The density value from density tag is displayed since Use Component Data checkbox is not selected and also editable.
However, when you select Use Component Data checkbox, the density and MW values from analyzer are displayed and are not editable.
